Why Greens?
I spent my life eating what was put in front of me. As a full time worker I was lucky to have a spouse who liked to cook. But the trade off is that I ate a lot of pasta. Vegetables were few and far between. I was bloated and uncomfortable most of the time.Now I'm cooking for myself. As I age, I am much more aware of how what I put in my mouth affects how I feel. And I do a lot of reading about what we need to live long and healthy lives. 70% fruit and vegetables is what I aim for in a day.
I eat a lot of salad. It's an easy, healthy lunch. People notice the salads I pack. I make them beautiful and tasty - a different theme every day.
This part of my blog is about cooking for yourself and increasing your veggie intake. There are very few grains in these dishes. There is a lot of fibre. It's relatively low carb. And I haven't concerned myself with calories - although you'll notice that most meals are quite low calorie, too.
It's about eating in a way that's good for your digestion and health. Eating to live long with lots of energy.
